Summer Salad: Caprese




I almost feel a little bit of anxiety when I think about the people that have never tasted a Caprese salad. I was thinking about this as I was grocery shopping last night. All it took was for me to see the crate of heirloom tomatoes to crave one of these. I just want to make sure you are all aware of their glory:

Keep it classic with this option. The usual suspects: fresh basil, tomatoes, mozzarella cheese and a small drizzle of balsamic vinegar and olive oil.


Having a group over? Use some cherry tomatoes to make little tomato 'buns'. Adorable!


If you're craving something sweet, substitute the tomatoes with strawberries and add some walnuts for a little extra crunch. Those little white balls - that's still mozz. You can purchase it from the store balled like this!


Stack it, fry it, glaze it - yes please. Fried cheese? Duh. Lightly bread your mozzarella and throw a quick pan-fry on it. This idea calls for you to reduce the balsamic with some brown sugar to thicken it a bit. This one sounds like it would be my favorite (other than my go-to classic).


Pasta night? Make it a Caprese pasta! No brainer here.


Lastly, the ever-popular flatbread pizza. Skip the tomato sauce and just use the tomatoes as the base. Fresh melty mozzarella never looked so good (except fried above ;))
